Enhancing Storage Stability Fresh Eggs with Ultrasonication

Özet

Değerli bir protein ve besin kaynağı olan taze yumurtalar sınırlı raf ömrü sahiptir. Ultrason ve ozon gibi termal-olmayan tekniklerle, uzun raf-ömrü ve minimum işlenmiş gıdaları üretilmesinde dikkat çekmektedir.  Bu araştırmanın amacı, ultrasonikasyon prosesleri(80W, 160W ve 360W) taze yumurtanın depolama stabilitesinin uzatılmasında kalite kalitelerine (albümin ve yumurta sarısı pH, Haugh ünitesi, yumurta sarısı indeksi, kuru madde ve RWC) etkinliği araştırmaktır.  Taze yumurtaların, yumurta sarısı indeksi(YI) depolamada kontrolde, 0,42'den 0,27'ye düşerken, 360W, 160W ve 80W sırasıyla 0,32, 0,33 ve 0,33 düşmüştür. Haugh birimi(HU) 4 haftalık depolama sonrası 79,30'dan kontrolün 40,66'a düşerken, 47,39HU(360W), 46,73(160W) ve 47,07(80W) düşmüştür. Stabilite, başlangıç değeri 31'den (kontrol) 25-18 (ultrasonikasyon) depolama sonunda 6,5 (kontrol) 13-14'e (ultrasonikasyon) düşmüştür. Albümin pH değerleri depolama sonunda 8.67-8.84'ten (başlangıç) 9,54'e (kontrol) 9,43-9,41'e (ultrasonikasyon) ulaşmıştır. Yumurta sarısının pH değerleri 6.07'ye(kontrol) depolama sonunda 6,35(kontrol) 6,27(80W), 6,25(160W) ve 6,23'e(360W) artmıştır. Albüminin kuru madde, 14.23'ten (başlangıç) depolama sonunda 16.43 (kontrol)-16,5(360W),16,62(160W)ve 16,90(80W)'a yükselmiştir. Yumurta sarısının kuru madde değerleri depolama sonunda 48.75'ten (başlangıç) 44.78'e(kontrol) -46,48(360W), 46,26(160W) ve 45.92'ye(80W) düşmüştür. RWC değerleri (başlangıç 932-845), depolama sonunda 725(kontrol), 860(360W), 847(160W) ve 855(80W) düşmüştür. En düşük kabuk mukavemeti, ultrasonik kavitasyon nedeniyle 360W- ultrasonikasyon yumurtalarında (4.1 (kgf)-top) gözlenmiştir. Bu çalışmadan, taze yumurtaların fonksiyonel özelliklerini (pH, HU, YI, DM ve RWC) muhafaza eden ultrasonikasyonun, gücüne bağlı olarak stabilitesini korumuştur. Yüksek ultrason (300W) kabuk mukavemetini azaltan mikro çatlaklara yol açmıştır. Bu çalışma, taze yumurtaların depolama stabilitesinin, özellikle 80W ve 160W, kabuk mukavemetine olumsuz bir etki olmaksızın en az 1 hafta uzatıldığını göstermiştir. Ultrasonikasyon, taze yumurtaların uzun süreli depolama stabilitesini artırılmasında uygulanabilir ve etkili bir prosestir. 

Fresh eggs as a valuable source of protein and nutrients have a limited shelf life. With non-thermal techniques such as ultrasound and ozone, it attracts attention in the enhancing of shelf-life and minimally processed foods. The aim of this research is to investigate the effectiveness of ultrasonication processes (80W, 160W and 360W) on quality qualities (albumin and egg yolk pH, Haugh unit, egg yolk index, dry matter and RWC) in extending the storage stability of fresh eggs. The yolk index (YI) of fresh eggs decreased from 0.42 to 0.27 for control during storage, while 360W, 160W and 80W decreased by 0.32, 0.33 and 0.33, respectively. Haugh units (HU) decreased from 79.30 to 40.66 (control), while 47.39HU(360W), 46.73(160W) and 47.07(80W) after 4 weeks of storage. Stability decreased from the initial value 31(control) 25-18(ultrasonication) to 6.5(control) 13-14(ultrasonication) at the end of storage. Albumin pH values increased from 8.67-8.84(initial) to 9.54(control) 9.43-9.41(ultrasonication) at the end of storage. The pH values of egg yolk increased to 6.07- (initial)- 6.35 (control) 6.27 (80W), 6.25 (160W) and 6.23 (360W) at the end of storage.  The dry matter of albumin increased from 14.23 (initial) to 16.43(control) -16.5(360W), 16.62(160W) and 16.90(80W) at the end of storage. Dry matter values of egg yolk decreased from 48.75(initial) to 44.78(control) -46.48(360W), 46.26(160W) and 45.92(80W) at the end of storage. RWC values (initial 932-845) were decreased to 725(control), 860(360W), 847(160W) and 855(80W) at the end of storage. The lowest shell strength, due to ultrasonic cavitation 360W-in ultrasonication eggs (4.1(kgf)-top) has been observed. From this study, it was reveal that the functional properties of fresh eggs (pH, HU, YI, DM and RWC) were preserved depending on the ultrasonication power used. High ultrasound (300W) caused micro cracks that reduced shell strength. This study showed that the storage stability of fresh eggs, especially 80W and 160W, was extended for at least 1 week without any adverse effect on shell strength. Ultrasonication can be a feasible and effective process for increasing the long-term storage stability of fresh eggs.
