Yemeğin pişirilmesi ve sunumunun yanı sıra mutfak kültürünün yaşatılmasında aşçılar önemli bir role sahiptir. Aşçıların gurmelere yönelik algılarını incelemeyi amaçlayan bu çalışmada, turizm sektöründe çalışan aşçılara yönelik görüşme tekniği tercih edilmiş ve not alma tekniği kullanılmıştır. Veriler 50 katılımcı ile gerçekleştirilen görüşmeler sonucunda 2024 yılı Ocak ve Şubat aylarında elde edilmiştir. Veriler dünyaca ünlü gurmeler arasında Gordon Ramsay’in en sık tekrarlanan isim olduğunu, Türkiye’de ise Vedat Milor’un öne çıktığını göstermektedir. Katılımcıların gurme kavramına yönelik görüşlerine bakıldığında ise alanyazında yer alan gurme tanımları ile benzerlik taşıdıkları görülmektedir.
In addition to cooking and presenting the food, cooks play an important role in keeping the culinary culture alive. In this study, which aims to examine the perceptions of cooks towards gourmets, the interview technique was preferred for cooks working in the tourism sector and the note-taking technique was used. The data were obtained as a result of interviews with 50 participants in January and February 2024. The data show that Gordon Ramsay is the most frequently repeated name among world-famous gourmets, while Vedat Milor stands out in Turkey. When the participants' views on the concept of gourmet are examined, it is seen that they are similar to the definitions of gourmet in the literature.
